Foods I Love – Asparagus

I found a new website that I absolutely love!!  It is the “World’s Healthiest Foods” and while it just sounds like a list of foods, it’s so much more.  For each food on the list, there is a link to tons of research information on that food.  It gives nutritional information, as well as the chemicals present in the food.  I am going to start sharing these because they’re that amazing!!  The first one I am going to share is for Asparagus.

Asparagus is one of my favorite vegetables.  Broiling asparagus in olive oil with fresh garlic is a delicious treat.  This Garlic Shrimp Salad sounds particularly amazing!  I can’t wait to try it!

I remember learning that after buying asparagus at the grocery, you should store them upright in a small amount of water.  But, what I didn’t know was that asparagus still breathe after being picked.  This article presents a better suggestion, wrapping the ends in a wet cloth while in the refrigerator.  It is also suggested to consume fresh asparagus within 48-hours of purchasing.

I knew asparagus was a good source of vitamins and phytochemicals.  But, I wasn’t aware that there were over 100 phytonutrients in asparagus (maybe I should start analyzing food in the lab) and that asparagus is an antioxidant and contains anti-inflammatory benefits.  It’s also an important source of the digestive nutrient, inulin, which is good news to people like!  Unfortunately, most research on disease prevention considers mice and rats, but the results are promising and it would be great to see human studies in the future!

It’s encouraging to see that one of my favorite vegetables is incredibly healthy for reasons I have never considered.  That’s a great incentive to eat more quality food!
